What do you think about eating oatmeal every morning? (Organic, non processed) good carb/fiber source?

No reason why not, again it’s just a carb, they all have their place, even the “bad” ones sparingly

Why white rice vs the whole grain brown that lots of people recommend?

The difference in nutrients is negligible, brown rice also can contain arsenic.
